Cafe de Krissy

On Saturday we had some of the Loocks (Ryan's family) come over for dinner. We made Cafe Rio Pork Salads. They were so good. The recipe made a ton. We have been eating it for 4 days for lunch and dinner and now it is finally almost gone!! Don't get me wrong it tastes delicious but eating it everyday twice a day gets a little old. Here is the yummy recipe:
For the Pork
4lb pork roast
2Tbsp Brown Sugar
2Tsp crushed red pepper
2Tsp salt
2Tsp cumin
2Tsp Paprika
1 sliced onion
2 cloves garlic, minced
1c Chicken Stock
1 can of coke (not diet)
Put it all in a crock pot for 8 hours or overnight, then take out and shred & add
1c brown sugar
2tsp Paprika
Return to crock pot (it says for another 8 hours, but I don't think it really needs to be in there that long)

Ranch Dressing:
1c Mayo
1pkg. Hidden Valley Buttermilk Dressing (powder)
1/2 c buttermilk
1/4 tsp cayenne
1 c cilantro, chopped
2 cloves garlic, minced
3 tomatillos quartered
Blend in blender until smooth

Now all you need is Lettuce, tortillas, black or pinto beans, rice and then whatever else you want on your salad! It is so delicious!!!! Here is not so much a good picture, but a picture none the less, of our dinner :)
