On Saturday we had some of the Loocks (Ryan's family) come over for dinner. We made Cafe Rio Pork Salads. They were so good. The recipe made a ton. We have been eating it for 4 days for lunch and dinner and now it is finally almost gone!! Don't get me wrong it tastes delicious but eating it everyday twice a day gets a little old. Here is the yummy recipe:
For the Pork
4lb pork roast
2Tbsp Brown Sugar
2Tsp crushed red pepper
2Tsp salt
2Tsp cumin
2Tsp Paprika
1 sliced onion
2 cloves garlic, minced
1c Chicken Stock
1 can of coke (not diet)
Put it all in a crock pot for 8 hours or overnight, then take out and shred & add
1c brown sugar
2tsp Paprika
Return to crock pot (it says for another 8 hours, but I don't think it really needs to be in there that long)

1c Mayo
1pkg. Hidden Valley Buttermilk Dressing (powder)
1/2 c buttermilk
1/4 tsp cayenne
1 c cilantro, chopped
2 cloves garlic, minced
3 tomatillos quartered
Blend in blender until smooth
1c Mayo
